About Sami

My Story

 

During my previous career as a microbiologist, I began to realize that I craved human interaction- the kind that I have now experienced by working with patients. I was also working with lab samples from patients with acute and chronic diseases and I began to realize that a healthy diet & lifestyle would help to improve their immune systems so that they could prevent future infection. These realizations led me to change careers and go back to school to study nutrition with the ultimate goal of becoming a dietitian.

I have finally completed the Coordinated Program in Dietetics at the University of Texas at Austin (UT) which included food service, administrative, and clinical rotations as well as specialty rotations in the following areas: outpatient oncology, critical care, private practice, and outpatient counseling. My previous education includes a Bachelor’s of Science in Microbiology as well as a Master’s in Nutritional Sciences at UT in 2010 and 2015, respectively.  I have conducted research on the relationship between diet and gut microbiota composition and the effects of dietary fiber on inflammation. My Master’s thesis, “Dietary Fiber Linked to Decreased Inflammation in Overweight Minority Youth,” was published in the Pediatric Obesity journal. During my 2 years in the food service industry, I also gained experience in management, food production and quality, food safety, and customer service. I am a certified yoga teacher, and I enjoy cooking, doing yoga, and hiking with my dog in my free time.

 

After completing the dietetic internship, I hope to work as a clinical dietitian in the Austin area. With my experience in medical nutrition therapy and counseling/education in the areas of critical care, oncology, and both in-patient and out-patient settings, I believe that I would be a great fit for this role. I am a team player who also takes initiative, thinks critically, and is passionate about clinical dietetics and research-based practice. Please click through my site to learn more about my experiences during my dietetic internship!
