Administrative Rotation: Resolute Health

I spent 2-weeks down in New Braunfels at Resolute Health learning about how to run a successful Hospital Food Service with Dion Turner, RDN, LD. The food service was in the process of some serious changes, such as staffing, product changes, etc., so I learned a lot during my short time there. In addition to the many changes that were taking place, Resolute was preparing for a Joint Commission visit. My main project revolved around the food product labeling system that was in place and editing the food labeling policy to reflect the changes that were occurring. This project helped the food service department prepare for the upcoming Joint Commussion visit. I also got to assist with a cooking demonstration and nutrition class taught by Dion as a part of their community outreach program. Overall I learned a lot about creating policies, how to prepare for a Joint Commission visit, and .

Projects: 

  • Updated the food labeling policy to reflect new changes and new foods that had been purchased. 

    • This involved researching use-by-dates for foods used in the Resolute Health food service and updating the current labeling matrix used to label foods with use-by-dates.​

  • Prepared updated food costs to reflect new food purchasing changes.

  • Obtained nutritionals for new foods and entered into call center portal, GEM-Serv.

  • Created a new receiving policy to reflect changes that had occurred in the receiving process.
