I spent two weeks with the dietitians at Texas Nutrition Consultants observing, providing input, and learning how to counsel and educate patients on the topics of weight loss, type 2 diabetes/type 1 diabetes/pre-diabetes, hypoglycemia, polycystic ovarian syndrome, disordered eating, gestastional diabetes, weight loss surgery, pediatric sports nutrtion, vegetarianism/veganism, and GI disorders. I was able to observe different dietitians and their styles of counseling techniques as well as observing the clients and their acceptance/resistance to the different methods. 

 

Projects: I created handouts on the following topics- Chair Strength-Training Workout, whole foods carb exchanges, snack ideas for teen athletes, physical activity ideas and resources for people with limited mobility, nutrition during cancer treatment, managing side effects of chemo/radiation, nutrition for cancer survivors.

What I Learned:

  • I gained a solid foundation in diabetes education and carbohydrate counting.

  • I learned about the tight glucose control needed with gestational diabetes and the diet that is recommended to keep tight blood glucose control.

  • I learned about the steps that are needed in order to go through with weight loss surgery and the different pre-surgery diets that are recommended by some of the surgeons in Austin.
