Food Service Rotation:

 Small Middle School

I spent 6-weeks at Small Middle School working with some truly amazing women. I helped cook, bake, clean, and even created a recipe that I made for the kids and received their feedback. The students really enjoyed the recipe and even asked if it would be on the menu permanently! I also successfully completed 3 days of solo-management at the conclusion of my rotation.

Projects: 

  • Taught employees how to use the buffalo chopper and tilt skillet.

  • Baked and cooked large-batch menu items: Fried rice, cheese enchiladas, spicy black bean salad, rolls, and chocolate chip cookies.

  • Conducted both an audit and health inspection of the facility- Small MS came out on top!

  • Created a recipe that fits into the National School Lunch guidelines and advertised the recipe to the students and faculty. 

Small Middle School: 

  • Average Enrollment: 998 students

  • Average # of breakfasts served per day: 65

  • Average # of lunches served per day: 375

Here is a photo of my preceptor, Amanda, and I after I taught her how to use the Buffalo Chopper. I have tears running down my face because I used onions as my demonstration vegetable! 

Here are some examples of the foods that I prepared during my time at Small MS- Whole wheat chocolate chip cookies, spicy black bean salad, "fried" rice, cheese enchiladas, and whole wheat rolls.

I loved having the opportunity to create a new recipe for the students to try! I wanted to create a recipe with items that were already in use for other entrees/sides and I also wanted the entree to be something the kids would be interested in. I noticed that there was only one wrap on the current menu, and thought that this recipe would be a good addition. AISD gives the schools the option to purchase local fruits and vegetables and we were able to purchase local green-leaf lettuce to use in this recipe. I made 30 wraps to be served during the 3 lunch periods and I sold-out of every wrap!

When the students picked up the wrap, they were also asked to fill out an evaluation form. My favorite part of this project was reading the responses to the evaluation form. The majority of responses were very positive! The students really enjoyed the new menu item and wished to see it on the menu permanently.
